- Take 1 cup coriander
- Prepare 3-4 green chillies
- Take Juice of half lemon
- Take 1 piece ginger
- Get 3-4 garlic
- Prepare 1 dry red chilli
- Make ready Extra elements
- Prepare Pau as required
- Prepare Green chillies as required
- Take 1 cup Fried zurmuri

- Wash and boil potatoes. Peel the skin off. Let them cool down and mash. Add in salt, green chillies and ginger paste, ground coriander seeds, garam masala, chopped coriander and lemon juice. Put tempering pan on gas. Add in oil. Start adding mustard seeds, asafoetida and chopped curry leaves. Add in turmeric powder and prepare tempering. Add this into mashed potato masala. Mix well. Make medium sized balls out of the prepared masala.
- Take besan in a bowl. Add salt, turmeric powder, required water to make a thick batter. Add in soda bi carb and mix properly. Deep aalu vada in the batter and fry in hot oil. Make all vadas like this. Pour remaining batter of besan drop by drop in to hot oil to make crispy zurmuri.
- For dry red chutey in a mixer jar add pieces of 2 pau. Add dry red chillies, salt, chilli powder, garlic, 1/2 cup fried zurmuri and pulse it to make a uniform red dry chutney.
- For green chutey in a mixer jar add washed coriander, green chillies, garlic, ginger, salt. Grind it to make a paste. Add Little water to make it of a chutney consistency. Take out in a bowl and squeeze lemon. Mix well. Our green chutney is ready.
- To assemble slice a Pau tillid way. Apply both green and red chutey. Put some fried zurmuri. Put one vada and close the Pao. Serve with green chilli.
