Vegetable Chowmein is an Asian Street Style recipe where all the vegetables are sautéed in high heat in a wok and then tossed with sauces and noodles. Vegetables are cooked until just tender for a wok style cooking.

- In a pot, add salt, 1 tablespoon of oil and bring it to boil. Now add the noodles and cook it al dente. Do not overcook the noodles as they will turn mushy.Immediately strain the water from the noodles and wash the noodles with cold water. This stops the cooking of the noodles and prevents it from overcooking.Keep the noodles aside.
- In a pan or wok add the remaining oil.
- Once the oil is hot add the grated garlic to the oil and saute for 30 seconds on medium flame.
- Then, add the chopped spring onion bulbs and continue sautéing for another minute.
- Add the capsicum, carrot, onion, cabbage and green chilies and continue sautéing till the veggies are cooked through.
- In a bowl, mix the soya sauce, green chilli sauce, vinegar and sweet chilli sauce and mix well.Add this mixture to the kadai and adjust the salt as per your taste. [Remember soya sauce has salt in it. Also you have added salt while boiling the noodles. So you will require very less salt if you need at all]
- Mix the sauce with all the vegetables and add the boiled noodles to the kadai.
- Mix the noodles with the veggies and sauce on a low flame. You can use two spoons for mixing.
- Turn off the flame. Garnish the noodles with spring onion greens and serve them hot.
