If the heat is too high, the breadcrumbs can burn and it’ll be undone in the center.
  4. Allow to drain on a wire rack. These are great by themselves but I had it with a little sweet chili sauce.

Spin dry and roll in a clean dish towel to dry completely. Great for a quick dinner and even cold on salad the next day!. Drop croquettes carefully into the hot oil. Using a slotted spoon, remove croquettes from the oil as they are done and drain on paper towels. Place a linen napkin on a platter and arrange the croquettes in a pile.
