Hilsa or Ilish is a Bengali favourite. In this recipe we show you a curry of Hilsa with Colocasia and Brinjal/Aubergines/Eggplant. Ilish Machher Jhol is one of my favorite Ilish preparation. This is a very light curry of Hilsha fish, which is cooked with eggplant & potato.

Instructions to make Ilish Beguner Jhol:
  1. Coat fishes with salt and turmeric powder. Put mustard oil in pan. Wait till smoke comes out. Fry the fish pieces in the oil.
  2. Set them aside after frying.
  3. Temper the same oil with 1 tsp Nigella Seeds. Cut the eggplant into cubes and put it in pan for frying.
  4. Add salt and turmeric powder. Toss everything.
  5. After few minutes,when eggplants starts softening,add water and green chilli.
  6. Wait till water starts boiling. Add the fried fish pieces. Cook till fish pieces get soaked in curry.
  7. Serve hot with rice.

Spices are used in a very little amount. In this curry , Ilish can be added raw or very lightly fried. Ilish Macher Jhol Aloo Begun Diye- This Lite and delicious Bengali fish curry cooked with Potato, Eggplant is a family favourite. The main ingredient for this recipe is the fresh Hilsa fish. To me, then, Ilish was about the rich gravies; mostly prepared with Mustard, coconut, or curd but not a stew-like dish.
