Instructions to make Lemon Jam:
  1. Thoroghly wash 8 lemons.0
  2. Zest 6 lemons! Chop two lemons into small pieces. Squeeze out juice from two lemons. Set aside lemon juice.
  3. In a large pot, put in zest, chopped lemons, and 2 cups of water. Bring mixture to a boil, then reduce heat and simmer for 10 minutes. Strain ONLY the water. Repeat this step.
  4. After straining the water, now add lemon juice, sugar, and 2 cups water.
  5. Bring to a boil and let simmer for 40 min to an hour. The water should evaporate and the jelly should be concentrated. The color will turn dark.
  6. Test whether the jam is ready by spooning a bit of the jam onto a plate, chilling it, then gliding your finger across. It should feel like jelly.
  7. Transfer the jam into a glass jar and chill in the fridge for a few hours! Enjoy!

Pour the jam into a jar and put it in the fridge to cool. The jam will thicken quite a bit once it cools so it shouldn't feel exactly like jam while still on the stove. Cranberry Lemon Jam uses the whole lemon which is a sneaky and easy step- no supreming here! Meyer lemons are high in acid, as are cranberries, making this a foolproof first canning recipe. Prepare your water bath canning pot or your steam canner.
