I like to use the king of steaks - the Ribeye! It has the perfect amount of marbling and it really is the most beautiful beginning to this wrap. Other great choices include a flank steak, skirt steak or even sirloin. Thinly slice steak across the grain and transfer back to skillet.

  1. In a bowl mix together all ingredients to make blue cheese spread
  2. In a pan on medium heat add oil or butter. Add onions and saute until soft.
  3. Add your beef to the pan and saute for about 2 mins.
  4. Lay out your tortilla, add desired amount of blue cheese spread onto the tortilla. Then add spinach and your sauteed beef and onions. (The heat from the onions and beef will slightly wilt the spinach)
  5. Wrap up your tortilla by folding in the sides first then roll the other end over. Enjoy!
